1 + 1/2 cups oat flakes
1 cup medjool dates, well packaged (~14 dates)
1/2 cup peanut butter or almond butter.
1/4 cup pumpkin puree
1 teaspoon vanilla extract
1 teaspoon cinnamon powder.
1/4 teaspoon ground ginger, or less if you don’t like pumpkin spices.
1/4 teaspoon ground nutmeg.
1/4 teaspoon salt 3 tablespoons mini chocolate chips.

Add oats, dates, peanut butter, pumpkin, vanilla, cinnamon, ginger, nutmeg, and salt to the base of a food processor. Process the ingredients until a sticky, almost smooth dough forms. The dough should be able to pinch and stick when you press it with your hands. Transfer dough to a large bowl. Add mini chocolate chips and mix to combine. Roll the dough into 1-inch balls. Enjoy!
